An abundance of kale

We had planted kale and purple sprouting broccoli starter plants in early October last year. Kind of late but it was such a nice warm fall and so very different from this cold, wet, and windy spring.

We added more kale plants in March that were still in our old beds from last year, looking tiny and sad. They took off incredibly in the next 2 months and we were blessed with an abundance of kale, Romanesco broccoli, and purple sprouting broccoli which lasted us until now, mid June. Awesome early food for pollinators, mostly bumble bees. Only yesterday we took our last kale plants out.

One of my favourite ways to eat kale and lots of other greens is pairing it with eggs for a delicious, low carb, and light breakfast. On the savoury side of course but sooo good.
